~ Ingredients ~

  • ABC gluten-free flour is blended by us and may include any of the following ingredients, all of which are certified gluten-free by their manufacturers: arrowroot starch, tapioca flour, amaranth flour, coconut flour, quinoa flour, brown rice flour, white rice flour, sorghum flour, and teff flour.

  • butter, egg, egg whites, heavy cream, almonds, and milk are certified as organic and gluten-free by their manufacturers.

  • cocoa powder, cacao nibs, semisweet and bittersweet chocolate, vanilla extract, almond extract, sugar, brown sugar, unsulphured molasses, unsulphured crystallized ginger, ground cinnamon, ground ginger, ground allspice, yeast, salt, baking powder, baking soda, cream of tartar, instant espresso powder, xylitol, erythritol, and olive oil are certified gluten-free by their manufacturers.

  • xanthan gum and guar gum are certified gluten-free by their manufacturers.

~ Kitchen ~

  • We bake in a gluten-free kitchen. However, gluten-containing products have been baked here in the past. Every effort has been made to eliminate sources of trace wheat-related allergens from our kitchen and our equipment.

  • We use an ELISA-based test to spot-check equipment, raw ingredients, and finished baked goods for the presence of glutenins and gliadians. The test we use can, according to the manufacturer, reliably determine the presence of these allergens in a sample at concentrations of 10 ppm (10 mg/kg) or higher. At the request of the customer, we will test their baked goods using this method for a nominal charge.

  • Note that we rely upon manufacturer's gluten-free certifications, and that the highest acceptable limit of wheat-related allergen concentrations used to qualify a gluten-free status for various products can vary from manufacturer to manufacturer.

  • As a safety precaution, we do not recommend that persons suffering from celiac disease consume our products in large quantities or if symptoms of allergic reaction emerge upon consumption.
